
A feast fit for a king and queen

“Londoners like their wine red and dishes hearty.
They’ll find plenty of both at the annual London Health Sciences Foundation’s Tastings event.
Tastings – an exclusive evening featuring fine cuisine prepared by the region’s top chefs and top wines selected to complement each dish – is a feast fit for a king and queen.
Back for a fourth time, Tastings provides samples from around the world in a posh setting at the London Hunt and Country Club on May 6.
“Being a chef and also having an appreciation for wine . . . makes it fun,” said Idlewyld Inn executive chef Tim D’Souza, who is involved in Tastings a second time.
Last year, D’Souza was asked to prepare Spanish cuisine. His cured foie gras and chorizo stew was paired with wine from the Priorat region of Spain. He fell in love with the wine by Marco Abella.
“That region of Spain produces some really beautiful wines. I was completely blown away. So much so that I tried to buy some but I couldn’t afford it,” D’Souza recalled with a laugh.”
