Executive Chef Tim D’Souza began his culinary career while still a student of history and politics at Trent University. His passion for food brought him to George Brown College where he earned a spot in the College’s post-graduate Italian Culinary Arts program. Opportunities to work at Michelin-starred restaurants and hotels in Italy and England followed, as did experience in some of Toronto’s most renowned restaurants. With over twenty years in the kitchen, Tim’s talent and skills have landed him senior positions as the Restaurant Chef of Accents Restaurant in the Sutton Place Hotel, Chef de Cuisine at Oro, critically-acclaimed for its high-end contemporary cuisine, and the Formal Dining Room Chef at the Granite Club.

Most recently, Tim wowed diners as the Executive Chef at Thornbury, Ontario’s Mill Cafe, where he quickly gained a reputation for dining excellence and showcasing locally-sourced ingredients. In fact, the restaurant earned a rare, out of town starred review from Toronto Life Magazine, which recognized that with Tim’s arrival, “stellar meals have become the norm”.

Tim is very excited to join the Idlewyld team, where his years of experience in the hotel industry and talent for innovative cuisine that showcases local, seasonal, exceptional ingredients will make for many truly memorable meals. 

When he is not in the kitchen, Tim can be found at home with his one year daughter who is developing quite an appetite for dad’s cooking.
